This traditional Italian hard cheese has been made by the Perenzin family for five generations in Treviso, nestled in the hills just North of Conegliano’s famous vineyards. Ciock is ripened in Cabernet and Merlot marc (the residue you get after pressing the grapes) which lends the organic cows’ milk cheese a delightfully fruity and boozy aroma.
The taste is sweet and parfumed, with hints of fruits.
The Ciock flavour is like a love letter from Italy, matching the heady aroma with approachable milkiness, moreish acidity, and a peppery finish.
